Had friends over for the weekend and we decided to upgrade the usual scrambled eggs:

Recipe for 4 servings:

  • 1 clove of garlic
  • 60g baby spinach
  • 200g cherry tomatoes
  • 8 eggs
  • 120ml milk
  • 100g grated cheese
  • salt, pepper, nutmeg

Mix everything and fill into a baking pan, bake at 200°C for 25-30min.

Perfect for any veggie leftovers, and it takes a little less hands-on-effort than scrambled eggs albeit the longer baking time.
