I am a cook that normally uses a lot of spices in cooking, but when I make hash browns I only salt them, adding pepper on the rare occasion.

If you do season them, what seasonings do you use? And do you add it before, during, or after cooking?

    Salt, pepper, crushed red, and paprika. Every time. I add it during cooking. Crushed red goes first into the oil to infuse. Then the potato, then the rest of the spices. Can’t say I make hashy browns often though, couple times a year. I just like the red spices. A lot.
