I used epicurian for about 5 years. Easy to clean. Dishwasher safe. Very abusive to my knives.
Now I have a maple board for produce only and I use plastic for meat. The plastic boards, I have 2, were $20 or so, and are expendable. As soon as they get beat up (a year), they get replaced. I’m not really chopping on the plastic, usually slicing, so I’m not too worried about micro plastic.
The maple board was a game changer. Knives stay sharp much longer, and it just feels better to cut and chop on. Hard to explain. Cleaning is easy. After use, I wipe with a clean, damp rag, then spray with a 50% vinegar/water solution, let sit a minute, then dry. Once a week (I use it often), I coat with a thin layer of mineral oil. Soaks right in.
I also think bamboo would be too hard on the knives.
I’m not a chef, not in the industry, just a home cook that likes to have the right tools.

I’m very new to docker. (Debian server) Have a few simple things running locally. Using tailscale outside of lan. How do I deploy this using Dockge? I’ve tried the compose files in Dockge. I tried the ‘run’ in docker… Keep getting “bad request”. Something about adding my server address to the host file… I got paperless ngx, Stirling PDF, and mealie going pretty easily by copy/paste from their installation pages.

Making a proper (?) French omelette. Watched Julia Child do it on TV. Changed my Sunday morning breakfast game big time. Beat two eggs. Heat a 10" non stick pan over medium heat. Throw in a tbsp of butter. When the butter bubbles up, the pan is hot enough. Dump in the eggs. Shake the pan over the flame to move the eggs around. I also use a set of chopsticks to help stir it up good. The eggs set in about a minute or so. Once set, I use a spatula to flip (roll) the egg from the edge of the pan, 2 times. Then plate. Watching a video of her doing it probably makes more sense than my description. Multiple new techniques for me. It’s fast. They are light. Everyone likes them.
