Your perception of reality seems very limited and partially falsified.
It is also unrelated to my statement.
Take a look at for example European legislation.

Little reminder: the GDPR has been in effect since May 25, 2018.
Under Art. 21(5) GDPR, automated opt-out signals like DNT and GPC have to be respected. That applies to everyone providing services in the EEA.
So most of to who it applies to should already have done it since 2018.
It will happen if nobody does something about it. And doomsayers like you only contribute to it; it’s a self-fulfilling prophecy.
Edit: Ever heard of spoofing? Brave does it to circumvent blocks.
Passkeys themselves are a very good security measure, better than a password plus 2FA via TOTP apps.
But having your passkey tied to a specific device with a specific operating system or an untrustworthy provider like Google, Microsoft, or Apple is not a good idea. You should avoid those and try to use a hardware key with passkey support or a password manager instead.

BlueMoon and Periodical can also be found on the F-Droid app store, no need for Google Play Services:
https://f-droid.org/packages/ch.nilsgrob.android.bluemoon
https://f-droid.org/packages/de.arnowelzel.android.periodical
Same for Germany, and I think even the whole EU.

For clarity, that is not an EU demand to implement ID-Verification, but rather X using it as an excuse to do so.

You know something goes too far when Google, and Meta speak out against it.
They also spoke against the denial of the volunteer Chat Control in the EU and said they will do it anyway (likely illegal).

Stick to Proton if you like it.

I don’t think it needs to be solved, they motivate people to support through other means and have a dedicated support button. Sponsorships are also a thing.
Regarding scaling, as the name implies, PeerTube makes use of Peer-to-Peer technology to reduce the load of platforms and it’s federated without an “official” instance, which allows content creators to spread across different instances, spreading the load it comes with.

Your best option is to use a browser with fingerprinting protections like Brave. Not sending a user agent at all is realistically speaking not feasible.

It’s pseudonymous, not anonymous.
TL;DR: Stick with Protonmail. There is, based on what you told us, no reason for you to switch to another provider.
I wouldn’t recommend Tuta at the time of writing, due the lack of OpenPGP (no, their own EE2E does not act as a solid replacement) and JMAP/IMAP support.
Vivaldi is much better than Chrome, Edge, Opera, etc.
But not on the same level as Brave.
(in the scope of Chromium-based browsers)
