That thing that allowed humans’ brains to develop and significantly reduced food related infection and is the single most important invention in the entire history of our species and one of the major things that allowed us to be where we are now? Believe it or not, that’s called processing.
Maybe it should be required by law to include critical nutrients in meat substitutes (perhaps in plant milk too?). It already worked for iodised salt in the 90s (at least here in Germany).

I believe there’s been several papers detailing such. But yes, a smoothie is processed, what they mean here is “ultra-processed”.
