The Vegan Chinese Kitchen by Hannah Che has been a favorite of mine this year. Every recipe I’ve tried from it tastes phenomenal. Great balance of quick/simple vs more complex/rewarding recipes.
I love the Veganomicon. It’s one I can just sit down and read and the recipes are top notch.
I love Bosh!. It has some great dishes for a dinner party, but also some simple things like Hummus and Baba Ganoush.

I love the how not to die and how not to diet books. It was my first pick based solely on the large colored photos of the food on every other page. 1/2 recipe. 1/2 picture of the book.

I have a ton of cookbooks and I never really use any of them except the New Farm Vegetarian (it’s vegan, not vegetarian, written in the 70’s) Cookbook by Louise Hagler.
I’ve been meaning to get that book. I’ve enjoyed Vegan Richa’s Instant Pot Cookbook. Also, not a cookbook, but I love the recipes from Addicted to Dates – the tiramisu is amazing.
Ooh, I don’t have the Instant Pot one - but if it’s anywhere close to how amazing Vegan Richa’s Indian Kitchen is, I need to add it to my shopping list!
Definitely Plants only kitchen by Gaz Oakley. Whatever we prepared from this book was amazing and many of the recipes are relatively easy. And it has nice photos of foods!
I bought “The Asian Vegan Kitchen” by Hema Parekh over ten years ago and it’s still the first one that comes to mind.
The one you mentioned in the OP looks great too, probably going to get it too…
While the recipes in there are not the fanciest, none other of my cookbooks has gotten as much use as “Easy Vegan Comfort Meals” by Derek Simnett. A lot of the recipes your can actually find on his YouTube channel (https://YouTube.com/@SimnettNutrition).
However, I have to say that none of the desserts look that appealing, so I’ve never made any. Maybe I just need to try some, though.
Salad Samurai is my favourite! I also like Vegan for Everybody.
i love the essential book of vegan bakes! As someone who really enjoys baking and found it hard to bake after going vegan, this book has held my hand through finding appropriate vegan substitutes and methods for baking specifically. I’d recommend any of the cupcakes and the double chocolate cookies!
