I recently bought an ebike that has peddle assist settings of 1-5. With 1 being lowest and 5 being maximum. These settings essentially act like gears setting the maximum motor power.
In crowded areas I set the speed to 1 so the bike
can’t exceed 15kph, on open roads I set the speed to 5 which is unlimited. I would definitely want this in a car.
Right? Like why isn’t there the ability for me to dictate power output from the motor rather than simply being on or off with speed being regulated via “things”, breaks, accelerator, sensors, etc.

No, I was thinking about bike pedals in a car as an auxiliary power input.
