As of now, Signal requires a phone number for registration on the notion that it avoids abuse and that our contacts are our social graph (https://signal.org/blog/the-ecosystem-is-moving).
Now, how secure is my phone number after the registration process. Does it become part of my profile (name, avatar, etc.,), which can’t be accessed by anyone (including Signal server)?

You need to deny access to contact at first. After registering go in settings and turn off contact discovery then you can allow contacts without phone number issue.
Also joining groups will expose phone number!
