To get too know the true spec you need special measuring devices. No software can tell you the true spec without knowing the actual inside of the cable. You can do a few test to get a rough estimate though. But that means testing all the capabilities and see what it does. Could be using the cables way out of spec that way however.

Honestly with many modern cars, yes even electric you can turn of most things like GPS and data tracking if you put the time and energy in too jt. But you might loose out on many features. If you dont care about most features just get the more basic model. And even then the data tracking that exist can be shut off someway or another. I know with Audi you can program things out with VAG Odis.

A good thing to setup are VLANS. I would at minimum creatie a VLAN for untrested devices like iot stuff.
You can setup a firewall so you can access the insecure devices but they cant access your trusted network them self.
This gives a good base to expand on.
You could also do this with a single device and a VM. Add a network bridge on the host connect both the host and a openwrt VM to it. And pass on the actual interface to the VM.

Yeah if you setup the firewall correctly you can access the TV but the TV can’t access anything it self.
And that’s why I have a VLAN without outbound connections allowed. Still allows me to cast to the device from a separate vlan but the TV has no internet at all.
If you have good backups of the phone to say something like nextcloud or a other cloud service. Wipe the phone clean before travel. Then just give them the pin. Nothing to see at all. Then pull down a backup once passed the border control.
Funny you say that.I install both from time to time. And find windows mutch more a hassel to install.
When you want a local account install with windows you first have to prep the whole ISO inject a unattended.XML file before install. Sometimes that’s not enough and windows will force choose the edition requiring even more work on the ISO preparation. Linux you boot and click true to non invasive menu and it just installs.
Yes their are ways to open cmd and get a local account that way, but not all work anymore and Microsoft is slowly shutting that door.
Kodi with the jellycon add-on, does require a jellyfin setup though.
If you dont mind live TV that is. While possible on kodi it is a bit more work.
